Ingredients

Scale

Biscuit Dough

  • 2 cups all-purpose flour (or gluten-free baking blend with xanthan gum)
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons cold butter, diced
  • 2 tablespoons granulated sugar
  • 3/4 cup milk or cream (or plant-based milk for vegan option)

Apple Filling

  • 2 medium apples, peeled and diced (preferably Granny Smith, Honeycrisp, or Fuji)
  • 1 teaspoon ground cinnamon
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract (optional)

Optional Add-ins and Toppings

  • 1/4 cup chopped walnuts or pecans (optional)
  • 1/4 cup raisins or dried cranberries (optional)
  • Granulated sugar for sprinkling (optional)
  • Maple syrup or glaze for drizzling (optional)

Instructions

  1. Prepare the Filling: In a mixing bowl, combine peeled and diced apples, cinnamon, brown sugar, and vanilla extract if using. Toss gently to coat the fruit evenly. Set aside to let the flavors meld while you prepare the dough.
  2. Mix the Dry Ingredients: In a large bowl, whisk together flour, baking powder, salt, and granulated sugar. This dry mix will give your biscuits a light, fluffy texture with a hint of sweetness.
  3. Cut in Cold Butter: Using a pastry cutter or your fingers, quickly cut the cold butter into the dry ingredients until the mixture resembles coarse crumbs. The cold butter is crucial for achieving the flaky layers characteristic of great biscuits.
  4. Add Milk and Form Dough: Pour in the milk or cream gradually, stirring until the dough just comes together without being too sticky. Avoid overmixing to keep the biscuits tender.
  5. Incorporate the Apple Filling: Gently fold the apple mixture into the biscuit dough, making sure the fruit is evenly distributed without crushing the pieces. Add nuts or dried fruit now if desired.
  6. Shape and Bake: Drop spoonfuls of the biscuit-apple dough onto a baking sheet lined with parchment paper, leaving space between each for spreading. Optionally sprinkle a little sugar on top. Bake in a preheated oven at 425°F (220°C) for about 12-15 minutes or until golden brown and fragrant. Remove and optionally drizzle with warm maple syrup or glaze before serving.

Notes

  • Chill your butter well to create flaky biscuit layers.
  • Use crunchy apple varieties like Granny Smith or Honeycrisp to maintain texture.
  • Don’t overmix the dough to avoid tough biscuits.
  • Serve warm for the best flavor experience.
  • Store leftovers in an airtight container: room temperature for up to 2 days, refrigerated for up to 1 week.
  • Freeze individual biscuits wrapped tightly for up to 3 months; reheat at 350°F (175°C) for 8-10 minutes.
