  • 1/2 cup mayonnaise

  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic, minced (or 1 tsp garlic powder)
  • 1 tbsp lemon juice
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prep Your Ingredients: Drain and chop the artichoke hearts into bite-sized pieces. Wash and finely chop fresh spinach, ensuring it’s dry to avoid watery dip. Mince the garlic to release its flavor.
  2. Mix the Base: In a mixing bowl, combine softened cream cheese, mayonnaise, lemon juice, minced garlic, salt, and pepper. Blend until smooth and creamy to create the dip’s foundation.
  3. Add Cheese and Vegetables: Fold in the chopped artichokes, spinach, grated Parmesan, and shredded mozzarella. Stir gently to combine without breaking up the veggies too much.
  4. Bake Until Golden: Transfer the mixture to a baking dish and spread evenly. Bake in a preheated oven at 375°F (190°C) for about 20-25 minutes or until bubbling and lightly golden on top.
  5. Serve Warm: Remove from the oven and let it cool for a few minutes. Serve warm with crackers, toasted baguette slices, or fresh veggies for dipping.
