  • 1 block of feta cheese (about 200g)
  • 2 cups cherry tomatoes, washed
  • 34 garlic cloves, whole
  • 3 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 8 ounces pasta of your choice (penne, rigatoni, fusilli recommended)
  • Fresh basil leaves, a handful

Instructions

  1. Preheat and prepare: Preheat your oven to 400°F (200°C). In a baking dish, place the block of feta cheese in the center and arrange the washed cherry tomatoes and whole garlic cloves around it. Drizzle generously with olive oil and season everything with salt and pepper.
  2. Bake the feta and tomatoes: Roast in the oven for 30 to 35 minutes until the cherry tomatoes burst, garlic softens, and feta becomes golden and creamy.
  3. Cook the pasta: While the feta and tomatoes roast, cook the pasta in salted boiling water until al dente. Drain the pasta but reserve some pasta water to adjust sauce consistency later.
  4. Combine and mash: Remove the baking dish from the oven. Gently mash the roasted tomatoes, softened garlic, and baked feta together with a fork or spoon. Stir in fresh basil leaves, add the cooked pasta, and toss to coat evenly with the sauce. Use reserved pasta water to loosen the sauce if needed.
  5. Serve warm and enjoy: Serve immediately, garnished with extra fresh basil leaves and a sprinkle of cracked black pepper for an irresistible finish.
