Ingredients

Scale

For the Salmon Meatballs

  • 12 oz fresh salmon fillets, finely chopped or pulsed
  • 1/2 cup panko breadcrumbs (or gluten-free breadcrumbs/almond flour for gluten-free)
  • 1 large egg, beaten
  • 1/4 cup finely diced onion
  • 1 clove garlic, minced
  • 2 tablespoons fresh herbs (dill or parsley), chopped
  • Salt, to taste
  • Black pepper, to taste

For the Creamy Avocado Sauce

  • 1 ripe avocado
  • 1/4 cup Greek yogurt or sour cream (or coconut cream/nut-based yogurt for dairy-free)
  • 1 tablespoon fresh lemon juice
  • Salt, to taste
  • Black pepper, to taste
  • Optional: 1/2 clove garlic, minced
  • Optional: Additional fresh herbs for flavor

Instructions

  1. Prepare the Salmon Mixture: Finely chop or pulse the fresh salmon fillets in a food processor until coarsely ground. In a bowl, combine the salmon with panko breadcrumbs, beaten egg, finely diced onion, minced garlic, fresh herbs, salt, and pepper. Mix gently just until combined, being careful not to overwork the mixture to keep it tender.
  2. Shape the Meatballs: With clean hands or a small ice cream scoop, form the mixture into bite-sized meatballs. Place them evenly spaced on a baking sheet lined with parchment paper or lightly greased to prevent sticking.
  3. Bake the Meatballs: Preheat your oven to 400°F (200°C). Bake the salmon meatballs for 12–15 minutes until they are just cooked through and lightly browned on the outside. Avoid overbaking to retain moisture and tenderness.
  4. Make the Creamy Avocado Sauce: While the meatballs bake, blend the ripe avocado with Greek yogurt (or your chosen substitute), fresh lemon juice, salt, and pepper until smooth and silky. Add optional minced garlic or herbs to taste.
  5. Serve Together: Plate the baked salmon meatballs and generously drizzle or dollop with the creamy avocado sauce. Garnish with extra fresh herbs or lemon wedges as desired and enjoy immediately.

Notes

  • Don’t over-process the salmon to keep meatballs tender and slightly coarse in texture.
  • Chill the salmon mixture in the refrigerator for 15 minutes before shaping to make handling easier.
  • Watch the baking time carefully; meatballs are done when firm and opaque inside to avoid drying out.
  • Use ripe, soft avocados for the creamiest, smoothest avocado sauce.
  • If the avocado sauce is too thick, thin with a splash of water or extra lemon juice to reach desired consistency.
  • Fresh herbs brighten the flavor of both meatballs and sauce and are highly recommended.
