Crust

  • 1 1/2 cups crushed graham crackers or Oreo cookies
  • 5 tablespoons melted butter

Filling

  • 8 oz cream cheese or mascarpone, softened
  • 1/2 cup sugar (adjust to taste)
  • 1 teaspoon vanilla extract
  • 1 cup whipped cream

Instructions

  1. Prepare the Crust: Crush the graham crackers or cookies into fine crumbs and mix with melted butter until the mixture looks like wet sand. Press firmly into the bottom and sides of a pie dish. Chill in the refrigerator to set while preparing the filling.
  2. Slice the Bananas and Strawberries: Peel and slice the ripe bananas into even rounds. Hull and slice the strawberries. Set fruit aside.
  3. Make the Creamy Filling: Beat softened cream cheese or mascarpone with sugar and vanilla extract until smooth and silky. Gently fold in the whipped cream until the mixture is light and fluffy.
  4. Layer the Pie: Spread a thin layer of cream filling over the crust. Add a layer of banana slices followed by strawberries. Repeat layering with remaining fruit and filling, finishing with a thick final layer of cream on top.
  5. Add Chocolate and Chill: Sprinkle chocolate chips or drizzle melted chocolate over the top layer. Refrigerate the pie for at least 4 hours or overnight to let flavors meld and the filling set.
