Ingredients

Scale

For the Egg Rolls

  • 10 egg roll wrappers (use gluten-free wrappers for gluten-free option)
  • 8 oz cream cheese, softened
  • 1 cup fresh blueberries
  • 2 tablespoons sugar
  • 1 teaspoon lemon zest
  • 1 egg, beaten (for egg wash)
  • 23 cups neutral oil (such as vegetable or canola) for frying

Instructions

  1. Prepare the filling: In a bowl, combine the softened cream cheese, fresh blueberries, sugar, and lemon zest. Gently mix until the blueberries are evenly coated but not crushed, keeping the filling chunky and fresh.
  2. Assemble the egg rolls: Lay out the egg roll wrappers on a clean surface. Place a spoonful of the cream cheese and blueberry mixture onto the lower corner of each wrapper. Fold in the sides and roll tightly toward the opposite corner. Seal the edge with beaten egg to keep it closed during frying.
  3. Heat the oil for frying: Pour oil into a deep skillet or fryer and heat it to about 350°F (175°C). Use enough oil to fully submerge the egg rolls for even crisping.
  4. Fry the egg rolls: Carefully place the assembled egg rolls into the hot oil, frying a few at a time to avoid overcrowding. Cook for about 2-3 minutes or until the wrappers turn golden brown and crispy.
  5. Drain and serve: Remove the egg rolls with a slotted spoon and lay them on paper towels to drain excess oil. Serve warm for the best texture and flavor experience.

Notes

  • Chill your cream cheese beforehand for easier spreading and mixing.
  • Do not overfill the wrappers to prevent tearing during assembly and frying.
  • Seal edges thoroughly with egg wash to keep rolls closed and crispy.
  • Maintain steady oil temperature around 350°F (175°C) to avoid soggy or burnt egg rolls.
  • Drain fried egg rolls on paper towels to reduce excess oil and maintain crispiness.
