Instructions

  1. Prepare Your Ingredients: Peel and dice the potatoes into even chunks to ensure uniform cooking. Chop the onions, celery, green bell pepper, and mince the garlic so all ingredients are ready for sautéing.
  2. Sauté the Aromatics: In a large pot, cook bacon or sausage if using until crispy to render fat. Remove the meat and sauté the onion, celery, green pepper, and garlic in the rendered fat until softened and fragrant, about five minutes.
  3. Add Potatoes and Seasoning: Add the diced potatoes to the pot and sprinkle the Cajun seasoning over the vegetables. Stir thoroughly to coat everything evenly and build the base flavor.
  4. Pour in Broth and Simmer: Add the chicken or vegetable broth, making sure the potatoes are fully submerged. Bring to a boil, then reduce heat to a simmer and cook until potatoes are tender, approximately 20 minutes.
  5. Blend and Add Cream: Using an immersion blender, partially puree the soup to create a creamy texture while retaining some potato chunks for heartiness. Stir in the milk and heavy cream, warming gently without boiling to maintain a silky texture.
  6. Finish and Adjust Seasoning: If using, add the cooked bacon or sausage back into the soup. Taste and adjust seasonings with salt, pepper, or additional Cajun spices to your preference.
