Instructions

  1. Hard boil the eggs: Place eggs in a pot and cover with cold water. Bring to a boil, then reduce heat and simmer for 10 minutes. Drain and transfer eggs to an ice bath to cool completely.
  2. Prepare the shrimp: While eggs cool, chop cooked shrimp into small bite-sized pieces. Toss gently with a pinch of Cajun seasoning to infuse flavor.
  3. Prepare the filling: Peel the eggs and carefully halve them lengthwise. Remove the yolks and place in a bowl. Mash the yolks smoothly, then stir in mayonnaise, Dijon mustard, lemon juice, Cajun seasoning, salt, and pepper until creamy and well blended.
  4. Mix in shrimp and green onions: Fold chopped shrimp and finely sliced green onions into the yolk mixture, ensuring everything is evenly distributed but still chunky enough to enjoy texture.
