Ingredients

Scale

Protein & Base

  • 1 lb ground beef or turkey
  • 2 cups elbow macaroni

Vegetables & Aromatics

  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes or 1 cup tomato sauce

Liquids

  • 1 cup beef broth or water

Cheese

  • 2 cups shredded sharp cheddar cheese

Seasonings

  • 1 tsp paprika
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Prepare the Beef and Aromatics: In a skillet over medium heat, cook the ground beef or turkey with finely chopped onion and minced garlic. Brown the meat thoroughly while stirring frequently until the meat is cooked through and the aromatics are fragrant. Drain excess grease to avoid a greasy dish.
  2. Cook the Pasta: Boil elbow macaroni in salted water for about 7 minutes until al dente. It should have a slight bite as it will finish cooking in the oven. Drain and set aside.
  3. Combine the Ingredients: In a large bowl, mix the cooked pasta with the browned meat mixture, diced tomatoes or tomato sauce, beef broth or water, paprika, salt, and pepper. Stir well to combine all components evenly.
  4. Layer the Cheese: Transfer the pasta mixture into a greased baking dish. Generously sprinkle shredded sharp cheddar cheese evenly over the top, which will melt into a golden crust when baked.
  5. Bake Until Bubbly and Golden: Preheat your oven to 350°F (175°C). Bake the assembled dish for 25–30 minutes, or until the cheese on top is bubbly and slightly browned. Remove from oven and let rest for a few minutes before serving.

Notes

  • Drain excess grease from cooked meat to prevent a greasy final dish.
  • Use sharp cheddar cheese for deep flavor and excellent melting texture.
  • Do not overcook the pasta; it should be just under al dente before baking.
  • Let the baked goulash rest after cooking to allow flavors to settle and make slicing easier.
  • Garnish with freshly chopped parsley or basil, and a sprinkle of paprika for color and freshness.
