Scale

Cake Ingredients

  • 2 ¼ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen cherries, chopped (thawed and drained if frozen)

Cherry Cream Cheese Frosting

  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 3 cups powdered sugar
  • ¼ cup pureed cherries
  • 12 tablespoons heavy cream or milk (to adjust consistency)

Instructions

  1. Prepare Your Cherry Cake Batter: Mix the dry ingredients—flour, baking powder, and baking soda—in one bowl. In another bowl, cream together softened butter and sugar until fluffy. Beat in eggs one at a time, then add vanilla extract. Gently fold in chopped cherries to evenly distribute cherry flavor through the batter.
  2. Bake the Cake Layers: Divide the batter evenly into greased and floured round cake pans. Bake in a preheated oven at 350°F (175°C) for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean. Allow the cake layers to cool completely before frosting to ensure smooth application.
  3. Prepare the Cherry Cream Cheese Frosting: Beat softened cream cheese and butter together until smooth and creamy. Gradually add powdered sugar while continuing to beat, then fold in pureed cherries for flavor and color. Adjust the consistency with heavy cream or milk as needed for easy spreading.
  4. Assemble the Cake: Place one cooled cake layer on a serving plate, spread a generous layer of frosting on top, and add the second cake layer. Apply frosting evenly on the top and sides of the cake for a polished finish. Chill briefly if desired to firm the frosting before slicing and serving.

Notes

  • Use fresh or frozen cherries; thaw and drain frozen cherries to prevent excess moisture.
  • Ensure butter, cream cheese, and eggs are at room temperature for better mixing and texture.
  • Do not overmix batter; gently fold in cherries and dry ingredients to keep the cake tender and airy.
  • Chill frosting before applying to help it set and hold shape.
  • Use a serrated knife to slice cake layers cleanly without disturbing the frosting.
