Ingredients

Scale

Cake Batter

  • 1 cup good-quality semi-sweet or dark chocolate, melted
  • 1/2 cup fresh butter, melted
  • 3 large eggs
  • 1 cup sugar
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Caramel Layer

  • 1 cup smooth, creamy caramel sauce (warm)

Toffee Crunch Layer

  • 3/4 cup finely chopped toffee bits

Frosting and Decoration

  • 1 cup chocolate ganache or chocolate buttercream
  • Optional: extra toffee pieces for decorating

Instructions

  1. Prepare the cake batter: Melt the chocolate and butter together until smooth and glossy. In a separate bowl, beat the eggs and sugar until light and fluffy, then gently fold in the flour, baking powder, and salt. Combine this mixture with the melted chocolate and butter, being careful not to overmix to maintain a tender crumb.
  2. Bake the cake layers: Pour the batter evenly into greased cake pans and bake at 350°F (175°C) for about 25-30 minutes or until a toothpick inserted into the center comes out clean. Remove from oven and allow the layers to cool completely before assembling.
  3. Add the caramel layer: Once cooled, generously spread a layer of warm caramel sauce over the first cake layer. Make sure the caramel covers the entire surface for maximum gooey goodness in each bite.
  4. Sprinkle toffee crunch: On top of the caramel, scatter an even layer of finely chopped toffee bits. The crunch will add a delightful texture contrast to the smooth caramel and soft cake.
  5. Assemble and frost: Place the second cake layer on top, then frost the whole cake with a rich chocolate ganache or buttercream. For an extra touch, press a few toffee pieces onto the frosted sides or sprinkle them on top as a decorative crunch.

Notes

  • Use room temperature ingredients to help the batter blend smoothly and prevent lumps.
  • Don’t overbake to avoid drying out the cake layers.
  • Warm caramel slightly to make spreading easier and prevent tearing the cake.
  • Chop toffee finely to ensure even distribution without overwhelming any bite.
  • Chill the cake before slicing for firm slices and cleaner cuts.
