Made with simple pantry ingredients and quick steps, these brownies deliver rich chocolate flavor with a moist, gooey texture ideal for any occasion.

Ingredients

Scale

Brownie Batter

  • 1/2 cup unsweetened cocoa powder
  • 6 oz high-quality dark chocolate, chopped
  • 1/2 cup (1 stick) butter
  • 1 cup granulated sugar
  • 3/4 cup all-purpose flour (or almond flour for gluten-free)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Ganache Topping

  • 1 cup heavy cream
  • 6 oz high-quality dark chocolate, chopped

Instructions

  1. Prepare the Brownie Batter: Melt the butter and chopped dark chocolate together until smooth and glossy. Stir in the sugar and cocoa powder until combined. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract. Gently fold in the flour and salt, taking care not to overmix to maintain a tender and fudgy texture.
  2. Bake the Brownies: Preheat your oven to 350°F (175°C). Pour the batter into a lined baking pan and smooth the surface. Bake for 20-25 minutes, until the edges are set but the center remains slightly soft to achieve the ideal fudgy consistency.
  3. Make the Ganache Topping: While the brownies bake, heat the heavy cream in a saucepan until it just begins to simmer. Pour the hot cream over the chopped dark chocolate and let it sit for a few minutes. Stir gently until the ganache is smooth and glossy.
  4. Apply the Ganache: Allow the brownies to cool slightly but remain warm. Pour the ganache evenly over the top and smooth it with a spatula. Let the ganache set at room temperature or refrigerate for a firmer finish.

Notes

  • Use quality dark chocolate for the best flavor impact in both batter and ganache.
  • Avoid overbaking; remove brownies when a toothpick shows moist crumbs for ultimate fudginess.
  • Bring eggs and butter to room temperature before mixing for better incorporation and texture.
  • Cool brownies slightly before adding ganache to prevent it from melting too thin.
  • For clean slices, chill brownies completely and cut with a hot, dry knife.
