Instructions

  1. Prepare the Meat Mixture: Brown the ground beef or turkey in a skillet over medium heat. Drain excess fat, then stir in the taco seasoning and cook until fragrant. Add black beans and diced green chilies, stirring to combine for a flavorful meat layer.
  2. Make the Creamy Sauce: In a bowl, mix together the sour cream or Greek yogurt with the salsa or enchilada sauce until smooth, creating a rich and tangy creamy component.
  3. Assemble the Casserole: Lightly grease a baking dish. Layer the bottom with torn or sliced flour tortillas. Spread half of the meat mixture evenly over the tortillas, then top with half of the creamy sauce and half of the shredded cheeses. Repeat the layers, finishing with a top layer of cheese to achieve a bubbly, golden crust.
