Ingredients

Scale

Protein

  • 2 lbs boneless, skinless chicken breasts or thighs

Pasta

  • 12 oz spaghetti noodles (regular or whole wheat), broken in half

Dairy

  • 8 oz cream cheese, cubed
  • 1/2 cup sour cream or Greek yogurt
  • 1 1/2 cups shredded cheese (cheddar or Mexican blend)

Liquids and Sauce

  • 2 cups chicken broth
  • 1 can (10 oz) diced tomatoes or Rotel

Aromatics and Seasonings

  • 1 medium onion, diced
  • 23 garlic cloves, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Optional: 1/2 tsp chili powder or paprika

Instructions

  1. Prepare Ingredients: Dice the onions and mince the garlic finely. If using pre-cooked chicken, shred it now; if raw, keep the chicken pieces whole for shredding later.
  2. Layer in the Crockpot: Place the chicken breasts at the bottom of the crockpot. Sprinkle diced onions, garlic, salt, pepper, and any optional seasonings like chili powder or paprika on top. Add the diced tomatoes and pour in the chicken broth to create a flavorful cooking base.
  3. Add Dairy and Noodles: Distribute cream cheese cubes and dollops of sour cream or Greek yogurt evenly around the crockpot. Break the spaghetti noodles in half and gently stir them on top, spreading them evenly but avoiding stirring too deeply.
  4. Cook on Low: Cover and cook on low heat for 4 to 6 hours, resisting the urge to open the lid frequently to maintain proper cooking temperature and texture.
  5. Final Mixing and Cheese: After cooking, shred the chicken directly in the crockpot using two forks. Stir everything together until creamy and well combined. Finally, mix in the shredded cheese until fully melted and smooth.

Notes

  • Use fresh shredded chicken: Cooking raw chicken and shredding after slow cooking offers the best texture and flavor.
  • Break noodles carefully: Snapping spaghetti into halves ensures even cooking and prevents clumping.
  • Don’t overfill your crockpot: Leave space to avoid overflow during cooking.
  • Adjust liquid carefully: Start with 2 cups of broth; add more if the dish seems too thick but avoid making it soupy.
  • Use sharp cheddar cheese for richer flavor and better melting.
