  • 3 cloves garlic (minced)

Liquids & Seasonings

  • 4 cups beef broth or water (enough to just cover ingredients)
  • 2 tablespoons pickling spices (mustard seed, peppercorns, bay leaves)

Instructions

  1. Prep Your Ingredients: Rinse corned beef brisket under cold water to remove excess brine, then pat dry. Peel and chop carrots and onion, keep baby potatoes whole, and roughly chop cabbage into wedges.
  2. Layer Everything in the Crock Pot: Arrange baby potatoes, carrots, and onions at the bottom of the slow cooker. Place corned beef brisket fat side up on top, then tuck cabbage wedges around the meat. Sprinkle pickling spices evenly over the top.
  3. Add Liquid and Cook Low and Slow: Pour beef broth or water until the ingredients are just covered. Cover and cook on low heat for 8 to 10 hours until the meat is tender and flavors meld.
  4. Rest and Slice: Carefully remove the corned beef and let rest for 10 minutes to lock in juices. Slice against the grain and serve alongside the cooked vegetables.
