Ingredients

Scale

Main Ingredients

  • 4 cube steaks (about 1 to 1.5 pounds), tenderized beef
  • 1 packet onion soup mix (about 1 ounce)
  • 2 cups beef broth
  • 1 large onion, sliced about 1/4 inch thick
  • 1 tablespoon flour or cornstarch (for thickening gravy)
  • 1 tablespoon cold water (to make slurry)
  • 2 tablespoons olive oil or butter (for searing)
  • Salt, to taste
  • Black pepper, to taste
  • 1/2 teaspoon garlic powder

Optional Seasonings and Variations

  • 1 cup sliced mushrooms (for mushroom gravy twist)
  • 1/4 teaspoon cayenne pepper or smoked paprika (for spicy kick)
  • 2 sprigs fresh rosemary or thyme (for herb-infused flavor)
  • Vegetable broth (replace beef broth for vegetarian style)
  • Xanthan gum or cream cheese (as low-carb thickening alternatives)

Instructions

  1. Prepare the Cube Steak: Season the cube steaks evenly with salt, pepper, and garlic powder. Lightly coat each piece with flour, shaking off any excess to avoid clumpy gravy later.
  2. Sear the Steak: Heat olive oil or butter in a skillet over medium-high heat. Sear the cube steaks for 2 to 3 minutes on each side until browned and a golden crust forms, locking in flavor.
  3. Layer Ingredients in the Crock Pot: Place the seared steaks at the bottom of the crock pot. Add the sliced onions evenly on top, then sprinkle the onion soup mix over everything. Pour the beef broth gently around the edges to keep the seasoning undisturbed.
  4. Slow Cook to Perfection: Cover and cook on low for 6 to 8 hours. This slow cooking tenderizes the meat and blends the flavors beautifully.
  5. Thicken the Gravy: About 30 minutes before serving, mix 1 tablespoon of flour or cornstarch with cold water to make a slurry. Stir this into the crock pot, then cook uncovered to thicken the gravy to a luscious consistency.

Notes

  • Searing adds caramelization and richer flavor, so don’t skip this step if possible.
  • Use the low setting on your slow cooker for tender, juicy meat without drying out.
  • Lightly dust the steak with flour to prevent clumpy gravy.
  • Let the meat rest a few minutes in the crock pot after cooking for optimal juiciness.
  • Adjust salt and pepper after cooking as flavors intensify during slow cooking.
