Ingredients

Scale

Pork Chops and Vegetables

  • 46 thick boneless or bone-in pork chops
  • 1.5 pounds baby red or Yukon gold potatoes, halved or whole
  • 1 large onion, sliced
  • 3 cloves garlic, minced

Seasonings and Liquids

  • 1.5 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the ingredients: Wash and halve or leave whole the potatoes. Slice the onion and mince the garlic. Pat dry the pork chops to prepare for optional searing.
  2. Layer the potatoes and onions: Place the potatoes at the bottom of the crock pot, followed by a layer of the sliced onions to create a flavorful base.
  3. Season and add pork chops: Sprinkle salt, pepper, thyme, and rosemary evenly over the potatoes and onions. Lay the pork chops on top, then distribute the minced garlic over the meat.
  4. Pour in the broth: Slowly pour the chicken broth over the ingredients so it mostly covers the potatoes but leaves the pork chops mostly above the liquid to prevent boiling.
  5. Cook low and slow: Cover the crock pot and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the pork chops are tender and potatoes are cooked through but not mushy.

Notes

  • Use thicker pork chops to avoid drying during slow cooking.
  • Searing the pork chops before cooking is optional but adds flavor.
  • Choose waxy potatoes like red or Yukon gold for best texture.
  • Layer vegetables on the bottom for even cooking as that area is hotter.
  • Taste the broth near the end and adjust seasoning if needed.
  • Leftovers keep well refrigerated for up to 3 days and freeze up to 2 months.
  • Reheat gently with a splash of broth to maintain moisture.
