Ingredients

Scale

Main Ingredients

  • 2 lbs boneless chicken breasts or thighs
  • 3 medium carrots, diced
  • 2 celery stalks, diced
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 6 cups chicken broth
  • 1 cup heavy cream or half-and-half
  • 8 oz egg noodles (thick-cut recommended)
  • 2 tbsp fresh herbs (thyme or parsley), chopped
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Vegetables and Chicken: Dice the carrots, celery, and onion finely for even cooking and maximum flavor. Place the chopped vegetables and minced garlic into the crockpot. Add the chicken breasts or thighs whole or cut into chunks depending on your shredding preference.
  2. Add Broth and Seasonings: Pour in chicken broth until the ingredients are just covered. Add salt, pepper, and your choice of herbs like thyme or parsley. Stir gently to combine while avoiding adding noodles or cream at this stage.
  3. Slow Cook Until Chicken is Tender: Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the chicken is fully cooked and vegetables have softened, allowing flavors to meld beautifully.
  4. Shred the Chicken and Add Cream: Remove the chicken pieces, shred them with two forks, then return the shredded chicken to the crockpot. Stir in the heavy cream or half-and-half to achieve that luscious creamy texture.
  5. Add and Cook the Noodles: Stir in the egg noodles and cook for an additional 20 to 30 minutes on low, or until the noodles are tender but not mushy. Monitor closely to prevent overcooking the noodles.

Notes

  • Use thick-cut egg noodles to help them hold up better during slow cooking.
  • Add noodles only at the end to prevent them from becoming mushy.
  • Shred chicken separately and add back to maintain clean texture.
  • Gradually add cream to avoid curdling and adjust creaminess to preference.
  • Fresh herbs brighten the richness and add layered flavors—don’t skip them.
  • Leftovers can be refrigerated for up to 3 days, flavors improve overnight.
  • Freeze soup without noodles for up to 3 months; add fresh noodles upon reheating.
  • For reheating, warm gently with a splash of broth or cream and stir occasionally.
