Instructions

  1. Prepare Your Ingredients: Clean mushrooms by wiping with a damp cloth and slice them evenly. Rinse fresh spinach thoroughly and pat dry to avoid excess moisture. Peel and finely mince the garlic cloves.
  2. Heat the Pan and Fat: Place a large skillet over medium heat and add olive oil or butter. Allow it to melt and shimmer, but avoid letting it smoke, to prepare for perfect sautéing.
  3. Cook the Mushrooms: Add the sliced mushrooms to the pan in a single layer, avoiding overcrowding. Stir occasionally and cook for 5-7 minutes until the mushrooms release their moisture and turn golden brown.
  4. Add Garlic and Spinach: Stir in the minced garlic and sauté for about 30 seconds until fragrant. Gradually add the spinach, tossing continuously until wilted yet still vibrant green, approximately 2-3 minutes.
  5. Season and Finish: Season the dish with salt and pepper to taste. If using fresh herbs, sprinkle them in now and toss everything together before removing from heat.
