Instructions

  1. Prepare the Sushi Rice: Rinse sushi rice under cold water until the water runs clear. Cook the rice according to your rice cooker or stovetop method. While the rice is still warm, gently mix in the sushi vinegar and spread the rice out to cool slightly.
  2. Mix the Seafood Filling: In a bowl, combine shredded imitation crab or your choice of seafood with mayonnaise, sriracha, and finely chopped green onions. Stir until creamy and slightly spicy, balancing the flavors well.
  3. Assemble the Layers: Evenly press half of the prepared sushi rice into the base of a baking dish. Spread the seafood mixture generously over the rice layer. Top with the remaining rice, pressing gently to hold all layers together.
  4. Add Cheese and Bake: Sprinkle shredded cheese evenly over the top. Bake in a preheated oven at 375°F (190°C) for 15–20 minutes or until the cheese is melted and golden brown.
  5. Finish and Garnish: Remove the bake from the oven and sprinkle toasted sesame seeds and extra chopped green onions on top for added aroma, color, and texture before serving.
