  • 1 splash water (about 1/4 cup)

Layers & Cheese

  • 68 flour or corn tortillas
  • 1 cup refried beans
  • 1 1/2 cups shredded cheddar cheese
  • 1 1/2 cups shredded Monterey Jack cheese
  • 1 cup salsa

Optional Toppings

  • Sour cream
  • Sliced jalapeños
  • Chopped cilantro
  • Diced avocado

Instructions

  1. Prepare the Meat Mixture: Brown ground beef or turkey in a skillet over medium heat. Once cooked through, add finely chopped onion and minced garlic; cook until softened. Stir in taco seasoning and a splash of water, then simmer until the mixture is well combined and thickened.
  2. Assemble the Layers: Spread a thin layer of salsa on the bottom of a baking dish to prevent sticking. Add a layer of tortillas to cover the base. Spoon a portion of the meat mixture over the tortillas, followed by dollops of refried beans and a generous sprinkle of shredded cheddar and Monterey Jack cheese. Repeat these layers using all ingredients, finishing with a top layer of cheese.
  3. Bake the Lasagna: Cover the dish with foil and bake in a preheated oven at 375°F (190°C) for 20 minutes. Remove the foil in the last 5 minutes to allow the cheese to brown and bubble.
  4. Let It Rest: Remove from oven and let the taco lasagna rest for about 10 minutes to let the layers settle, making it easier to slice and enhancing the flavors.
