Burrito Base

  • 1 cup refried beans

Filling Aromatics & Spices

  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and pepper, to taste
  • 12 tbsp cooking oil

Sauce & Garnish

  • 2 cups Mexican red enchilada-style sauce (homemade or store-bought)
  • Fresh cilantro, chopped (for garnish)
  • Optional: sour cream, sliced avocado, green onions

Instructions

  1. Prepare the Filling: Heat oil in a skillet over medium heat. Add diced onion and minced garlic, sautéing until fragrant and translucent. Add cooked protein (ground beef/shredded chicken/beans) to the skillet, seasoning with chili powder, cumin, paprika, salt, and pepper. Stir and cook until heated through and aromatic.
  2. Warm the Refried Beans: Heat refried beans in a microwave-safe bowl or on the stovetop until creamy and smooth to ensure easy spreading inside the burritos.
  3. Assemble the Burritos: Warm the flour tortillas briefly to prevent cracking. Lay each tortilla flat, spread a layer of refried beans in the center, then spoon the protein mixture on top. Optionally add shredded cheese inside. Fold the sides and roll the tortilla tightly into a burrito.
  4. Coat with Red Sauce and Cheese: Place each burrito seam side down in a baking dish. Pour Mexican red sauce generously over each burrito, ensuring they are completely covered. Sprinkle a generous layer of shredded cheese on top.
  5. Bake Until Bubbly: Preheat oven to 375°F (190°C). Tent the baking dish with foil and bake for 10 minutes to lock in moisture, then remove the foil and continue baking for another 5-10 minutes until cheese is melted, bubbly, and slightly golden. Garnish with fresh cilantro before serving.
