Instructions

  1. Brown the meat: Heat a skillet over medium-high heat and cook the ground beef or turkey until fully browned and crumbly, about 6 to 8 minutes. Drain excess fat, then stir in taco seasoning and 2 tablespoons of water to coat the meat evenly.
  2. Prepare the veggie mixture: Add rinsed black beans, corn kernels, and Rotel tomatoes into the seasoned meat. Mix thoroughly and let it cook together for 5 minutes, allowing flavors to blend and mixture to thicken slightly.
  3. Assemble the casserole layers: In a greased baking dish, spread half of the meat and veggie mixture evenly. Sprinkle a layer of crushed tortilla chips on top, followed by a generous handful of shredded cheese. Repeat the layers once more, finishing with a final layer of cheese for a melty topping.
  4. Bake until bubbly: Place the casserole in a preheated oven at 375°F (190°C) and bake for 15 minutes, until the cheese melts beautifully and starts to bubble.
  5. Garnish and serve: Remove from oven and let cool slightly. Top with dollops of sour cream, chopped green onions, and fresh cilantro before serving.
