Instructions

  1. Caramelize the Onions: Melt butter in a large skillet over medium heat. Add the thinly sliced yellow onions and a pinch of salt. Cook slowly for 25-30 minutes, stirring occasionally, until onions turn golden brown and caramelized, creating a rich flavor base.
  2. Cook the Chicken: Push the caramelized onions to one side of the pan. Add a little more butter if needed, then place chicken breasts or thighs in the pan. Sear each side for 3-4 minutes until golden but not fully cooked.
  3. Add Garlic and Rice: Stir minced garlic into the onions and cook for about one minute until fragrant. Add the uncooked rice and stir well to coat the grains with the buttery onion mixture.
  4. Pour in Broth and Simmer: Pour warm broth into the pan and nestle fresh thyme sprigs into the mixture. Bring to a gentle simmer, cover, and cook on low heat for 18-20 minutes, until rice is tender and chicken is cooked through.
  5. Add Cheese and Finish: Remove the lid and sprinkle grated Gruyère or Swiss cheese on top. Cover again and let the residual heat melt the cheese, creating a gooey, cheesy topping. Serve hot.
