Ingredients

Scale

Dough Ingredients

  • 3 ½ cups all-purpose flour
  • 2 ¼ teaspoons active dry yeast (1 packet)
  • 1 cup warm milk (about 110°F/43°C)
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 4 tablespoons unsalted butter, softened

Garlic Butter Spread

  • 6 tablespoons unsalted butter, melted
  • 34 fresh garlic cloves, minced
  • 2 tablespoons fresh parsley, finely chopped

Optional

  • 1 egg (for egg wash, beaten with 1 tablespoon water)
  • Fresh parsley or grated Parmesan cheese for garnish

Instructions

  1. Prepare the dough: Dissolve the active dry yeast and sugar in warm milk. Let it sit for about 5 minutes until foamy to activate the yeast. In a large bowl, combine the flour and salt. Gradually add the yeast mixture and softened butter to the dry ingredients. Knead the dough until smooth and elastic, about 8-10 minutes by hand or 5 minutes with a mixer.
  2. First rise: Place dough in a lightly greased bowl, cover with a clean towel or plastic wrap, and let rise in a warm place for 1 to 1 ½ hours, or until doubled in size.
  3. Shape the rolls: Gently punch down the risen dough to release air bubbles. Divide into 12-15 equal pieces and shape each into a tight ball. Arrange rolls close together on a greased baking sheet or pan allowing them to touch slightly.
  4. Prepare garlic butter spread: While the rolls rest for their second rise, melt butter and stir in minced garlic and chopped parsley.
  5. Second rise and prep: Cover shaped rolls and let rise for 30-40 minutes until puffy. Brush tops with garlic butter or egg wash for a golden crust.
  6. Bake the rolls: Bake at 375°F (190°C) for 15-18 minutes until golden and cooked through. Remove from oven and brush again with garlic butter. Let cool slightly before serving.

Notes

  • Always test yeast activation in warm milk and sugar before adding to dough.
  • Knead well to develop gluten for perfect roll structure and softness.
  • Don’t skip the second rise for fluffy, airy rolls.
  • Brush generously with garlic butter before and after baking for moist, flavorful rolls.
  • Use fresh garlic for the best vibrant garlic flavor.
