  • 3 cloves garlic, freshly minced

  • 1 tsp toasted sesame oil

Instructions

  1. Prepare Your Steak and Rice: Season the steak with salt and pepper. Heat a small amount of oil in a hot skillet and sear the steak to your desired doneness. Remove from heat and let it rest for a few minutes before slicing thinly against the grain. Ensure the day-old rice is cold and separated to prevent clumping.
  2. Cook the Garlic Butter: In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté gently until fragrant and golden, taking care not to burn it. This garlic butter will coat and flavor both the steak and rice.
  3. Scramble the Eggs: Push the garlic butter to one side of the pan. Pour in the beaten eggs and scramble them gently until just cooked. Mix the eggs evenly with the garlic butter in the pan.
  4. Stir-fry Rice and Vegetables: Add the cold rice, peas, diced carrots, and sliced scallions to the skillet. Stir-fry over high heat, breaking up any clumps, until the rice is heated through and slightly crisp on the edges.
  5. Combine Steak and Season: Return the sliced steak to the pan. Drizzle the soy sauce and sesame oil over everything. Stir carefully to combine all ingredients, heating through without overcooking the steak.
  6. Finish and Serve: Taste and adjust seasoning if needed. Serve immediately with optional garnishes such as sliced scallions, fresh herbs, toasted sesame seeds, or a wedge of lime for brightness.
