Ingredients

Scale

Steak and Seasonings

  • 1 choice steak cut (ribeye, strip, or filet mignon), about 1 to 1.5 inches thick
  • 12 tablespoons olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste

Herb Butter

  • 4 tablespoons unsalted butter, softened
  • 1 tablespoon fresh parsley, finely chopped
  • 1 teaspoon fresh thyme leaves, finely chopped
  • 1 tablespoon fresh chives, finely chopped
  • 1 clove garlic, minced

Instructions

  1. Prepare the Herb Butter: Mix softened unsalted butter with finely chopped parsley, thyme, chives, and minced garlic. Blend well, roll into a log using parchment paper, and chill in the refrigerator to firm up for easy slicing later.
  2. Season the Steak: Pat the steak dry with paper towels. Rub both sides lightly with olive oil, then generously season with salt and freshly ground black pepper to ensure a flavorful crust when grilled.
  3. Preheat and Oil the Grill: Preheat your grill to high heat until very hot. Oil the grill grates or brush the steak again lightly with olive oil to prevent sticking.
  4. Grill the Steak: Place the steak on the grill and cook for 4 to 6 minutes per side, depending on thickness and preferred doneness. Use a meat thermometer to check internal temperature, aiming for about 130°F for medium-rare.
  5. Rest and Add Herb Butter: Remove the steak from the grill and let it rest for 5 to 10 minutes to allow juices to redistribute. Top with a slice of chilled herb butter so it melts luxuriously over the warm steak before serving.

Notes

  • Bring steak to room temperature before grilling for even cooking.
  • Pat steak dry to achieve a beautifully caramelized crust.
  • Use a meat thermometer to ensure perfect doneness without guesswork.
  • Rest steak after grilling to lock in juices and tenderness.
  • Prepare herb butter in advance to allow flavors to meld and save time during cooking.
