Ingredients

Scale

Main Ingredients

  • 1 sheet puff pastry (thawed)
  • 4 oz deli ham, chopped
  • 1 cup shredded cheddar cheese
  • 2 large eggs
  • 1 tablespoon mustard or mayonnaise (optional)
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare the Puff Pastry: Thaw the puff pastry sheets according to package instructions on a lightly floured surface. Gently roll them out to smooth any creases, then cut into squares or rectangles sized for hand pies.
  2. Assemble the Filling: Chop the ham into small pieces and grate the cheddar cheese. In a small bowl, whisk together the eggs, salt, pepper, and optional mustard or mayonnaise until combined. Mix in the chopped ham and cheese to create a uniform filling.
  3. Fill the Pastry Squares: Spoon a generous amount of the ham and cheese filling onto one half of each pastry square, leaving a small border around the edges for sealing. Avoid overfilling to prevent leakage during baking.
  4. Seal the Hand Pies: Fold the empty half of each pastry square over the filling to form a triangle or rectangle. Press the edges firmly with a fork to seal, ensuring the filling stays inside while baking.
  5. Add Egg Wash and Bake: Beat one egg and brush it over the top of each hand pie to achieve a golden, shiny crust. Place the hand pies on a parchment-lined baking sheet and bake in a preheated oven at 400°F (200°C) for 15–20 minutes, or until golden brown and puffed.

Notes

  • Use cold ingredients to achieve the best flaky texture.
  • Do not overfill to avoid filling leakage during baking.
  • Seal edges well using a fork or fingers to keep filling contained.
  • Allow pies to cool slightly after baking before serving.
  • Try brushing tops with milk or butter instead of egg wash for a different crust texture and sheen.
