Mushroom Filling

  • 8 oz fresh cremini or button mushrooms, finely chopped

  • 2 cloves garlic, minced
  • 2 tbsp olive oil or butter
  • 2 tbsp mixed fresh herbs (thyme, parsley, chives), finely chopped

Assembly

  • 1 puff pastry sheet (about 10x14 inches), thawed but kept cold
  • 1 cup Gruyère cheese, grated
  • 1 egg, beaten (for egg wash)

Instructions

  1. Prepare the Mushroom Filling: Finely chop mushrooms, shallots, and garlic. Sauté gently in olive oil or butter over medium heat until mushrooms release their moisture and become tender. Add chopped herbs and cook a little longer to combine flavors. Remove from heat and allow the mixture to cool completely.
  2. Assemble the Puff Pastry: On a lightly floured surface, roll out the puff pastry sheet to the desired size if needed. Spread the cooled mushroom and herb mixture down the center, leaving about 1 inch clear on each side. Scatter the grated Gruyère cheese generously over the filling.
  3. Create the Plait Design: Using a sharp knife, cut diagonal strips on both sides of the filling. Carefully fold alternating strips over the center filling to create a braided plait pattern.
  4. Brush and Bake: Brush the entire pastry with beaten egg for a glossy golden finish. Place the plait on a parchment-lined baking tray and bake in a preheated oven at 400°F (200°C) for 20-25 minutes, or until puffed, golden, and cooked through.
  5. Serve Warm: Let the plait rest for a few minutes after baking. Slice and serve warm to enjoy the melty cheese and flavorful filling.
