Ingredients

Scale

Dough Ingredients

  • 3 1/2 cups all-purpose flour
  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 1 1/4 cups warm water (about 110°F / 43°C)
  • 1/4 cup unsalted butter, softened
  • 3 garlic cloves, freshly minced
  • 2 tablespoons fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme leaves, finely chopped
  • 1 teaspoon salt
  • 1 tablespoon sugar

For Brushing (Optional)

  • 1/4 cup milk

Instructions

  1. Activate the yeast: Dissolve the active dry yeast and sugar in warm water. Let it sit for 5 to 10 minutes until foamy to ensure the yeast is active.
  2. Prepare the dough: In a large bowl, mix the all-purpose flour, salt, minced garlic, chopped rosemary, and thyme. Add the activated yeast mixture and softened butter, then combine until the dough begins to form.
  3. Knead the dough: Turn the dough onto a floured surface and knead for 8 to 10 minutes until smooth and elastic, developing gluten for a fluffy texture.
  4. First rise: Place the dough in a greased bowl, cover with a damp cloth or plastic wrap, and leave in a warm environment until it doubles in size, about 1 to 1.5 hours.
  5. Shape the rolls: Punch down the risen dough to release the air, divide it into equal portions, roll each into a smooth ball, and arrange them in a greased baking dish or on a parchment-lined sheet.
  6. Second rise: Let the rolls rise uncovered again until puffy and nearly doubled, about 30 to 45 minutes.
  7. Bake to golden perfection: Optionally brush the tops with milk. Bake in a preheated oven at 375°F (190°C) for 20 to 25 minutes until golden brown and cooked through.

Notes

  • Use fresh rosemary and thyme for the best aroma and flavor.
  • Do not rush the rising times to ensure light and fluffy rolls.
  • Knead the dough sufficiently to develop good gluten structure.
  • Divide dough evenly for uniform baking and appearance.
  • Always preheat your oven thoroughly before baking.
  • Substitute plant-based butter and milk for a vegan version.
  • For variations, add cheese, whole wheat flour, or spices as desired.
