  • 100g brown sugar
  • 397g sweetened condensed milk (1 can)
  • 2 tbsp golden syrup
  • 1 tsp vanilla extract

Chocolate Topping

  • 200g dark chocolate

Instructions

  1. Prepare the Shortbread Base: Mix the unsalted butter, plain flour, and brown sugar until a soft dough forms. Press the dough evenly into a lined baking tray and bake at 180°C (350°F) for 18-20 minutes or until golden and firm. Let it cool completely.
  2. Make the Caramel Layer: In a saucepan, combine butter, brown sugar, sweetened condensed milk, golden syrup, and vanilla extract. Gently heat over low-medium heat, stirring constantly until the mixture thickens and becomes caramel-colored. Pour the caramel evenly over the cooled shortbread base and allow it to set at room temperature.
  3. Add the Chocolate Topping: Melt the dark chocolate gently using a double boiler or microwave in short bursts. Once melted, spread the chocolate evenly over the set caramel layer. Chill the tray in the refrigerator until the chocolate is completely firm.
  4. Cut and Serve: Using a warm, sharp knife, carefully slice the set shortbread into individual squares. Serve slightly chilled or at room temperature to enjoy the combined textures and flavors.
