Ingredients

Main Ingredients

  • Fresh Spinach – 4 cups, washed and chopped
  • Feta Cheese – 1 cup, crumbled
  • Phyllo Dough or Puff Pastry – 8 sheets (about 12 x 18 inches each)
  • Olive Oil – 6 tablespoons (for brushing and sautéing)
  • Garlic – 2 cloves, finely chopped
  • Onion – 1 small, finely chopped
  • Lemon Zest – 1 teaspoon, finely grated
  • Fresh Dill or Oregano – 2 tablespoons, finely chopped
  • Salt – 1/2 teaspoon
  • Black Pepper – 1/4 teaspoon

Instructions

  1. Prepare the Spinach Filling: Sauté finely chopped garlic and onion in 2 tablespoons olive oil over medium heat until soft and fragrant, about 3-4 minutes. Add fresh chopped spinach in batches and cook until completely wilted. Remove from heat and let cool slightly. Then, stir in crumbled feta cheese, lemon zest, chopped fresh dill or oregano, salt, and pepper until evenly combined.
  2. Assemble the Crisps: Lay one sheet of phyllo dough on a clean, dry surface and lightly brush it with olive oil. Place another sheet on top and brush again. Repeat until you have layered 3 to 4 sheets. Spread a thin, even layer of the spinach and feta mixture over the phyllo stack. Carefully roll or fold the dough into your preferred shapes, such as triangles, pinwheels, or logs.
  3. Bake to Perfection: Place the assembled crisps onto a baking sheet lined with parchment paper. Brush the tops generously with olive oil to help create a golden and crispy crust. Bake in a preheated oven at 375°F (190°C) for 15-20 minutes or until the crisps are golden brown and crisp.
  4. Cooling and Serving: Remove the crisps from the oven and allow them to cool for a few minutes so they firm up and develop their full crisp texture. Serve warm for best flavor, or enjoy at room temperature.

Notes

  • Cover phyllo dough sheets with a damp towel while working to prevent drying and cracking.
  • Use thin layers of filling to keep the crisps from becoming soggy and to maintain shape.
  • Brush olive oil generously on every layer of phyllo for a flaky texture.
  • Use fresh herbs and good quality feta to enhance flavor complexity.
  • Watch the baking time carefully to avoid burning the delicate pastry layers.
