  • 3 cups peeled, cored, and diced apples (Granny Smith or Honeycrisp)
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon juice, freshly squeezed
  • 1 tablespoon flour or cornstarch (for thickening)
  • 2 tablespoons small cubes of butter

  • Store-bought or homemade pie crust dough (enough for top and bottom layers)
  • 1 egg (for egg wash)

Instructions

  1. Prepare the Apples: Peel, core, and dice apples into small, uniform pieces. In a bowl, toss the apple pieces with lemon juice, sugar, cinnamon, and flour or cornstarch until well coated, building the spiced filling.
  2. Roll Out the Dough: On a lightly floured surface, roll pie dough to about 1/8 inch thickness. Use a round cutter or glass about 3 to 4 inches in diameter to cut out circles for the pie bases.
  3. Fill the Mini Pies: Place a spoonful of the spiced apple mixture into the center of each dough circle. Dot each filling with a small cube of butter for added richness.
  4. Seal and Shape: Cut matching dough rounds or lattices for tops. Place these over the filling, seal edges by pinching or pressing with a fork, and cut small slits on top to vent steam during baking.
  5. Apply Egg Wash and Bake: Brush tops of each mini pie with beaten egg to achieve a golden, shiny finish. Bake in a preheated oven at 375°F (190°C) for 20-25 minutes until the crust is deeply golden and the filling is bubbling.

Notes

  • Use cold butter and dough for a flaky crust.
  • Do not overfill to avoid leaks and soggy crusts.
  • Cut slits in top crust to let steam escape during baking.
  • Allow pies to cool at least 15 minutes to set filling properly.
  • For a softer sheen on crust, add a little milk or cream to the egg wash.
