Instructions

  1. Rinse and Prep the Rice: Rinse the short-grain rice under cold water until the water runs clear to remove excess starch and prevent gumminess. Drain and set aside.
  2. Simmer the Rice in Milk: In a heavy-bottomed saucepan, combine whole milk, rinsed rice, the cinnamon stick, and a pinch of salt. Slowly bring to a gentle simmer over low heat, stirring occasionally to prevent sticking. Cook until the rice is tender and the milk has thickened slightly, about 25 to 30 minutes.
  3. Whisk Eggs and Sugar: While the rice cooks, whisk together the egg yolks and granulated sugar in a bowl until the mixture becomes pale and smooth. This adds the custard’s creamy sweetness.
  4. Temper the Eggs: Gradually add a few tablespoons of the hot milk and rice mixture to the egg yolks while whisking constantly to raise the eggs’ temperature without curdling.
  5. Combine and Cook Until Thickened: Pour the tempered egg mixture back into the saucepan with the rice and milk. Cook over low heat, stirring constantly, until the custard thickens enough to coat the back of a spoon. Remove from heat, stir in vanilla extract, and discard the cinnamon stick.
  6. Cool and Serve: Transfer the custard into serving dishes. Serve warm or chill in the refrigerator to enjoy cold. Both ways are delicious.
