Ingredients

Steak

  • Ribeye or sirloin steak, 8 oz

Pasta and Sauce

  • Penne or rigatoni pasta, 8 oz (uncooked)
  • Butter, 3 tbsp (divided)
  • Garlic cloves, 3-4 large, minced
  • Beef broth or stock, 1 cup
  • Heavy cream or half-and-half, 3/4 cup
  • Parmesan cheese, 3/4 cup freshly grated
  • Fresh parsley, 2 tbsp chopped
  • Salt and black pepper, to taste

Instructions

  1. Prep the Steak: Season your steak generously with salt, black pepper, and a pinch of crushed red pepper flakes. Let it rest briefly while you prepare the other ingredients.
  2. Cook the Steak: Heat a large skillet over medium-high heat and melt 1 tablespoon of butter. Add the steak and cook each side for about 3-4 minutes for medium-rare. Remove the steak from the skillet and set aside to rest.
  3. Sauté Garlic and Build Flavor: In the same skillet, lower the heat slightly and add 2 tablespoons of butter. Toss in the minced garlic and a little crushed red pepper flakes, stirring until fragrant and golden but not burnt.
  4. Deglaze and Add Liquids: Pour in the beef broth, using a wooden spoon to scrape up browned bits from the bottom of the skillet. Stir in the heavy cream and bring to a gentle simmer.
  5. Cook the Pasta: Add the uncooked pasta directly into the skillet, ensuring it is submerged in the sauce. Cover and cook until the pasta is al dente, about 10 minutes, stirring occasionally to prevent sticking.
  6. Finish the Dish: Slice the rested steak into strips and return it to the skillet. Stir in freshly grated Parmesan cheese and chopped parsley. Adjust seasoning with salt and pepper to taste before serving.
