  • ½ tsp black pepper
  • 1 tsp fresh or dried rosemary, chopped
  • 1 tsp fresh or dried thyme, chopped
  • 1 tsp paprika or chili flakes (optional)

Instructions

  1. Prep the Ingredients: Wash and cut the potatoes into bite-sized chunks for even cooking. Slice the bell peppers into strips and peel and mince the garlic. Roughly chop fresh herbs if using.
  2. Toss and Season: In a large bowl, combine potatoes, peppers, and garlic. Add olive oil, salt, pepper, rosemary, thyme, and optional paprika or chili flakes. Toss well until everything is lightly coated.
  3. Arrange in the Baking Dish: Place sausages evenly on a baking sheet or roasting pan. Surround them with the potato and pepper mixture, spreading out for good airflow and roasting.
  4. Roast: Preheat oven to 400°F (200°C) and roast for 35 to 45 minutes. Turn potatoes and peppers halfway through to ensure even browning. Sausages should be golden and cooked through; potatoes tender and crispy.
  5. Serve Warm: Remove from oven and let rest for a few minutes before serving to let flavors settle and keep sausages juicy when sliced.
