Ingredients

Scale

Filling Ingredients

  • 4 cups fresh peaches, peeled, pitted, and sliced
  • 3/4 cup granulated sugar (for peaches)
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • Pinch of salt

Crust Ingredients

  • 1 cup all-purpose flour (or gluten-free flour blend for gluten-free)
  • 1 cup granulated sugar (for batter)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup milk (or almond/oat milk for dairy-free)
  • 1/2 cup unsalted butter, melted (or plant-based butter for vegan)

Instructions

  1. Prepare the Peaches: Peel, pit, and slice the fresh peaches into uniform pieces. In a bowl, toss them with 3/4 cup granulated sugar, cinnamon, nutmeg, lemon juice, and a pinch of salt. Let the mixture sit while you prepare the batter to macerate and develop flavors.
  2. Make the Cobbler Batter: In a medium bowl, whisk together the flour, 1 cup sugar, baking powder, and salt. Stir in the milk and melted butter until the batter is smooth and slightly thick but pourable, forming the crust base.
  3. Assemble the Cobbler: Pour the peach mixture into a well-buttered baking dish and spread evenly. Spoon or pour the batter gently over the peaches, allowing some fruit to peek through for bubbling and caramelization during baking.
  4. Bake to Perfection: Place the dish in a preheated oven at 375°F (190°C) and bake for 40 to 45 minutes. The cobbler is ready when the topping is golden brown and a toothpick inserted into the crust comes out clean, with the peach filling bubbly and thick.
  5. Cool and Serve: Let the cobbler rest for at least 15 minutes to allow the juices to settle and the crust to firm slightly, making serving easier and enhancing flavor.

Notes

  • Use ripe but firm peaches to avoid a watery filling and keep the fruit intact.
  • Mix the batter just until combined to ensure a light, fluffy crust.
  • Butter the baking dish thoroughly to add flavor and prevent sticking.
  • Allow the cobbler to cool before serving to thicken the filling and prevent burns.
  • Add a pinch of salt to the batter to enhance overall flavor complexity.
