Ingredients

Scale

Meatloaf Base

  • 1 lb ground beef (80/20)
  • 1 cup breadcrumbs (or gluten-free alternative)
  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1/2 medium onion, finely chopped
  • 2 cloves garlic, finely chopped
  • Salt, to taste
  • Black pepper, to taste
  • Spices (optional, e.g., 1/2 teaspoon smoked paprika or ground cumin)

Cheese

  • 1 cup shredded pepperjack cheese

Instructions

  1. Prepare the Ingredients: Finely chop the onion and garlic. Grate the pepperjack cheese if it’s not pre-shredded. Gather all other ingredients within reach for smooth mixing.
  2. Mix the Meatloaf Base: In a large bowl, combine the ground beef, breadcrumbs, eggs, chopped onion, garlic, milk, ketchup, Worcestershire sauce, salt, pepper, and any additional spices. Mix gently until well combined, being careful not to overmix to keep the meatloaf tender.
  3. Add the Pepperjack Cheese: Fold the shredded pepperjack cheese evenly into the meat mixture, ensuring every portion will have spicy, creamy pockets of cheese.
  4. Shape and Bake: Transfer the mixture into a loaf pan or shape by hand on a lined baking sheet. Bake at 350°F (175°C) for 55-65 minutes, or until the internal temperature reaches 160°F (71°C).
  5. Rest and Slice: Remove from the oven and let the meatloaf rest for at least 10 minutes. This step locks in juices and makes slicing easier.

Notes

  • Don’t overmix the meat to avoid a tough texture.
  • Distribute cheese evenly and reserve some for topping for a melty crust.
  • Use a meat thermometer to ensure the meatloaf is cooked to 160°F (71°C).
  • Adjust milk and breadcrumbs to achieve the desired moisture balance.
  • Let the meatloaf rest before slicing to preserve juiciness.
