Ingredients

Scale

Topping

  • 1/4 cup (57g) Butter
  • 1/2 cup (100g) Brown Sugar
  • 8 Pineapple Rings (fresh or canned)

Cake Batter

  • 1 1/2 cups (190g) All-Purpose Flour
  • 1 1/2 teaspoons Baking Powder
  • 1/4 teaspoon Salt
  • 1/2 cup (113g) Butter, softened
  • 3/4 cup (150g) Granulated Sugar
  • 3 large Eggs
  • 1 teaspoon Vanilla Extract
  • 1/2 cup (120ml) Milk or Buttermilk

Instructions

  1. Prepare the Topping: Melt butter and brown sugar together in a saucepan until bubbly and smooth. Pour this caramel mixture evenly into the bottom of your bundt pan, then neatly arrange the pineapple rings on top to form the signature upside-down design.
  2. Mix the Batter: In a bowl, whisk together the dry ingredients: all-purpose flour, baking powder, and salt. In a separate large bowl, cream softened butter and granulated sugar until fluffy. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract and milk. Gradually blend in the dry ingredients until smooth and thick.
  3. Assemble and Bake: Gently pour the batter over the pineapple and caramel in the bundt pan, smoothing the top with a spatula. Bake at 350°F (175°C) for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
  4. Cool and Invert: Allow the cake to cool in the pan for about 10 minutes, then carefully invert it onto a serving plate. The caramelized pineapple topping should glisten invitingly on top, ready for slicing.

Notes

  • Use fresh pineapple if possible for a brighter, juicier topping.
  • Grease the bundt pan thoroughly to prevent sticking and ensure clean release.
  • Mix the batter just until combined to keep the cake tender and light.
  • Start checking for doneness at 40 minutes to avoid overbaking.
  • Allow the cake to rest briefly before inverting to prevent topping breakage.
