Ingredients

Scale

Pork Chops

  • 4 boneless or bone-in pork chops, about 1-inch thick

Sauce Mixture

  • 1 can (10.5 oz) condensed cream of mushroom or cream of chicken soup
  • 1 cup sour cream (full-fat recommended)
  • 1/2 cup milk
  • 1 cup frozen mixed vegetables
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste

Topping

  • 1 to 1 1/2 cups shredded cheese (cheddar, mozzarella, or blend)
  • 3/4 cup crushed crackers or breadcrumbs

Instructions

  1. Prepare the Pork Chops: Season the pork chops with salt, pepper, onion powder, and garlic powder. Lightly brown each side in a skillet over medium-high heat for 2-3 minutes per side to seal in juices and add a golden exterior. Do not cook through as they will finish cooking in the casserole.
  2. Mix the Sauce: In a large bowl, stir together the condensed cream soup, sour cream, and milk until smooth. Fold in the frozen mixed vegetables to create a creamy and flavorful sauce that provides moisture and nutrition.
  3. Assemble the Casserole: Grease a baking dish and arrange the browned pork chops in a single layer. Pour the sauce mixture evenly over the pork chops, ensuring each piece is well coated for even flavor distribution.
  4. Add Cheese and Topping: Generously sprinkle shredded cheese over the sauce layer. Then, scatter crushed crackers or breadcrumbs on top to create a golden, crunchy topping once baked.
  5. Bake to Perfection: Cover the dish loosely with foil and bake at 350°F (175°C) for 45 minutes. Remove the foil during the last 10 minutes to brown the cheese and topping. The pork chops should be tender and the casserole bubbly and golden.

Notes

  • Choose even-sized pork chops to ensure uniform cooking.
  • Do not skip browning the pork chops; it enhances flavor and texture.
  • Use full-fat sour cream to achieve the creamiest sauce that won’t curdle.
  • Cover the casserole while baking to retain moisture and meld flavors.
  • Let the casserole rest for a few minutes before serving to thicken the sauce.
