Pumpkin Pie Crisp

Pumpkin Pie Crisp is a warm, comforting fall dessert featuring a creamy spiced pumpkin filling topped with a buttery, crunchy oat crumble, perfect for family gatherings and cozy evenings.

Ingredients

Scale

Pumpkin Filling

  • 1 can (15 oz) pumpkin puree (or fresh pumpkin puree)
  • 1/2 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/3 cup milk or cream

Crisp Topping

  • 3/4 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup all-purpose flour (or almond/oat flour for gluten-free)
  • 1 teaspoon ground cinnamon
  • 1/2 cup cold unsalted butter, cut into small pieces

Instructions

  1. Prepare the Pumpkin Filling: In a medium bowl, combine pumpkin puree, brown sugar, cinnamon, nutmeg, ginger, cloves, and milk or cream. Mix until smooth and well blended to create a creamy, spiced base.
  2. Mix the Crisp Topping: In a separate bowl, stir together rolled oats, brown sugar, flour, and cinnamon. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  3. Assemble the Crisp: Spread the pumpkin filling evenly into a greased baking dish. Sprinkle the oat crumble topping evenly over the pumpkin layer, covering it completely.
  4. Bake Until Bubbly and Golden: Preheat the oven to 350°F (175°C). Bake the assembled dish for 40–45 minutes, until the topping is golden brown and the pumpkin filling is bubbling along the edges.
  5. Cool and Serve: Allow the Pumpkin Pie Crisp to cool for at least 10 minutes before serving to help the filling set and the flavors meld beautifully.

Notes

  • Use freshly ground spices for the best flavor.
  • Chill the butter before mixing for a crispier topping.
  • Mix topping ingredients gently to preserve oat texture.
  • Allow ingredients to reach room temperature before mixing filling for even texture.
  • Cool the crisp slightly before serving to help it hold its shape.
