Ingredients

Scale

Muffin Batter

  • 1 ¾ cups all-purpose flour (or gluten-free baking blend for GF)
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • 1 ½ cups pumpkin puree
  • ½ cup unsalted butter, melted (or coconut oil for vegan)
  • 2 large eggs (or 2 flax eggs for vegan)
  • 1 teaspoon vanilla extract
  • ¾ cup brown sugar

Streusel Topping

  • ½ cup all-purpose flour (or gluten-free blend)
  • ¼ cup brown sugar
  • 1 teaspoon ground cinnamon
  • 3 tablespoons unsalted butter, softened (or coconut oil for vegan)

Instructions

  1. Prepare the Streusel Topping: Mix softened butter, brown sugar, cinnamon, and flour until crumbly. Chill briefly to keep it crumbly during baking.
  2. Mix Wet Ingredients: In a large bowl, whisk together pumpkin puree, melted butter, eggs, vanilla extract, and brown sugar until smooth and well combined.
  3. Combine Dry Ingredients: In a separate bowl, whisk flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves thoroughly to ensure even distribution.
  4. Blend Wet and Dry Components: Gradually fold the dry ingredients into the wet mixture, gently mixing to keep a few lumps for a tender crumb without overmixing.
  5. Fill Muffin Cups and Add Streusel: Divide the batter evenly into lined or greased muffin tins. Generously sprinkle the streusel topping over each muffin to create a crunchy crust.
  6. Bake and Cool: Bake at 375°F (190°C) for 20-25 minutes or until a toothpick comes out clean. Allow muffins to cool before serving.

Notes

  • Use freshly ground cinnamon and nutmeg for best flavor.
  • Do not overmix the batter to keep muffins tender.
  • Bring eggs and butter to room temperature before mixing.
  • Chilling streusel topping helps maintain its crumbly texture after baking.
  • Check muffins a few minutes early due to oven variations to prevent overbaking.
