  • 1 medium cucumber, thinly sliced
  • 1/4 cup red onion, thinly sliced

Dressing & Herbs

  • 2 tbsp olive oil (for dressing)
  • 2 tbsp fresh lemon juice
  • 2 tbsp fresh parsley or cilantro, chopped

Instructions

  1. Prepare the Chickpeas: Drain and rinse the chickpeas thoroughly. Pat them dry completely with a clean towel to ensure they roast crisp and don’t steam during cooking.
  2. Roast the Chickpeas: Preheat the oven to 400°F (200°C). Toss chickpeas with olive oil, paprika, cumin, garlic powder, salt, and pepper until fully coated. Spread them evenly in a single layer on a baking sheet. Roast for 25-30 minutes, shaking or stirring the pan halfway through to ensure even crisping.
  3. Prepare the Salad Base: While chickpeas roast, chop mixed greens, halve cherry tomatoes, thinly slice cucumbers, and red onion. Combine these fresh veggies in a large salad bowl.
  4. Dress and Combine: Drizzle olive oil and fresh lemon juice over the salad base and toss gently to coat. Once chickpeas are cool enough to handle, add them to the salad along with chopped fresh herbs for an aromatic burst.
  5. Final Toss and Serve: Toss all ingredients gently but thoroughly to distribute flavors evenly. Taste and adjust seasoning as needed with additional lemon juice or salt. Serve immediately to enjoy the perfect combination of crunch and freshness.
