Perfectly bite-sized, these truffles deliver a decadent melt-in-your-mouth experience ideal for gifting, special occasions, or everyday indulgence.

Ingredients

Scale

Fudge and Caramel Base

  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 1/2 cup heavy cream
  • 14 oz sweetened condensed milk (about 1 can)
  • 8 oz high-quality chocolate, chopped (dark or milk chocolate)
  • 1 tsp vanilla extract

Finishing

  • Sea salt flakes, for sprinkling
  • Optional: melted chocolate or caramel sauce for drizzling

Variations (optional)

  • Substitute coconut cream and vegan butter for dairy-free version
  • Crushed toasted pecans or almonds for nutty twist
  • Pinch of cayenne or chili powder for a spicy kick
  • Use white chocolate instead of dark or milk chocolate

Instructions

  1. Prepare the Caramel Base: Melt the unsalted butter in a medium saucepan over medium heat. Stir in the brown sugar and heavy cream, cooking gently until the sugar dissolves and the mixture thickens to a creamy caramel consistency. Stir frequently to prevent burning.
  2. Combine with Chocolate and Vanilla: Remove the saucepan from heat and immediately add the chopped high-quality chocolate and vanilla extract. Stir continuously until the chocolate completely melts and the mixture is smooth, glossy, and fudge-like.
  3. Chill the Mixture: Pour the fudge mixture into a lined baking dish and spread it evenly. Refrigerate for at least 2 hours or until the fudge is firm enough to scoop and shape.
  4. Form the Truffles: Using a small cookie scoop or spoon, portion out the chilled fudge into bite-sized balls. Roll each ball between your palms to smooth the shape and place them on parchment paper.
  5. Add the Finishing Touch: Lightly sprinkle each truffle with sea salt flakes for that signature salted caramel flavor. Optionally, drizzle melted chocolate or caramel sauce over the truffles for extra decoration.

Notes

  • Use high-quality butter, chocolate, and sea salt for the best flavor.
  • Avoid overheating the caramel to prevent bitterness and grainy texture.
  • Ensure the fudge is fully set in the fridge before shaping to avoid sticky hands.
  • Lightly oil palms or use powdered sugar when rolling truffles if mixture is soft.
  • Store in airtight containers to maintain freshness and texture.
