Ingredients

Scale

Protein

  • 3 cups cooked chicken, shredded or diced

Creamy Base

  • 1 can (10.5 oz) cream of chicken or cream of mushroom soup (or homemade white sauce)
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 cup milk

Biscuits

  • 1 can (8 count) pre-made biscuit dough or equivalent homemade biscuit dough

Cheese

  • 1 to 1 ½ cups sharp cheddar cheese, shredded

Vegetables

  • 1 cup frozen or fresh vegetables (peas, carrots, corn mix or your choice)

Seasonings

  • Salt, to taste
  • Black pepper, to taste
  • 1 tsp garlic powder
  • 1 tsp dried mixed herbs or fresh thyme/rosemary/parsley (optional)

Instructions

  1. Prepare the Chicken and Vegetables: If your chicken is not pre-cooked, cook and shred or dice it. Chop fresh vegetables or thaw frozen ones, ensuring they are ready to incorporate evenly throughout the casserole.
  2. Mix the Creamy Base: In a saucepan, melt butter over medium heat, whisk in flour to form a roux, then gradually add milk while stirring until thickened. Alternatively, use the cream soup. Stir in shredded cheese and vegetables, then fold in the cooked chicken along with salt, pepper, garlic powder, and herbs to create a thick, flavorful filling.
  3. Assemble in the Casserole Dish: Grease a casserole dish and spread the creamy chicken mixture evenly within. Drop biscuit dough pieces evenly on top, spacing them apart to allow for expansion during baking.
  4. Bake Until Golden and Bubbly: Preheat oven to 375°F (190°C) and bake the casserole for 25-30 minutes, or until the biscuits are golden brown and the filling bubbles at the edges.
  5. Rest Before Serving: Let the casserole sit for a few minutes after baking to set and cool slightly, making it easier to serve and enjoy.

Notes

  • Use rotisserie chicken to save time and boost flavor.
  • Give biscuits enough space for fluffy layers by not overcrowding them.
  • Add cheese inside the filling and on top for melty, gooey texture throughout.
  • Season the filling generously and taste before baking to ensure balanced flavor.
  • For added crunch, sprinkle crushed crackers or breadcrumbs on the biscuits before baking.
  • Make it gluten-free by choosing gluten-free biscuit dough and cream soups.
