Instructions

  1. Caramelize the Onions: Thinly slice the sweet yellow onions and cook them slowly over low heat with a bit of oil or butter. Stir occasionally until the onions turn golden brown and develop a deep, sweet flavor, about 20-25 minutes.
  2. Cook the Sausage: While the onions are caramelizing, brown the ground sausage in a separate pan. Break it apart as it cooks, seasoning lightly with salt, pepper, and fresh thyme for added depth of flavor.
  3. Combine Filling Ingredients: Once the sausage is cooked and the onions are caramelized, combine them in the pan along with the minced garlic. Stir everything together over low heat for a few minutes to allow the flavors to marry well.
  4. Prepare the Puff Pastry: Roll out the puff pastry sheets on a lightly floured surface. Cut them into rectangles approximately 4×6 inches (10×15 cm) each, or size preferred for your rolls.
