  • Black pepper – ¼ teaspoon
  • Olive oil or butter – 2 tablespoons, for sautéing and finishing

Instructions

  1. Prepare the Spinach: Wash the fresh spinach thoroughly and blanch it in boiling water for 1-2 minutes. Drain and squeeze out as much moisture as possible to prevent soggy dough.
  2. Cook and Mash Potatoes: Boil the potatoes until fork-tender. Peel them while still warm and mash until smooth, creating a light and fluffy base for the gnocchi dough.
  3. Combine Ingredients into Dough: In a large bowl, mix the mashed potatoes, finely chopped spinach, all-purpose flour, egg, salt, and pepper until a soft but manageable dough forms. Avoid overmixing to keep the gnocchi tender.
  4. Shape the Gnocchi: Roll the dough into long ropes about 1 inch thick. Cut into bite-sized pieces and gently press grooves onto each piece using a fork to help sauce adhere.
  5. Cook and Serve: Bring a large pot of salted water to boil. Cook the gnocchi in batches, dropping them gently into the water. Once they float to the surface (about 2-3 minutes), remove with a slotted spoon. Immediately toss with your favorite sauce, butter, or olive oil.
