Steak and Lobster

  • 2 choice steaks (ribeye or filet mignon), about 8 oz each
  • 2 fresh lobster tails (chilled, live, or fully thawed if frozen)

  • 3 tbsp butter
  • 3 garlic cloves, minced plus 2 whole cloves for basting
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • Salt, to taste
  • Freshly cracked black pepper, to taste
  • 1 lemon, cut into wedges
  • 2 tbsp olive oil

Instructions

  1. Step 1: Prep Your Steak – Bring steak to room temperature, about 20-30 minutes before cooking. Pat dry with paper towels and season generously with salt and freshly cracked black pepper. This resting time allows even cooking and seasoning penetration.
  2. Step 2: Prepare Lobster Tails – Using kitchen shears, carefully cut down the top shell of each lobster tail, exposing the meat but leaving it attached at the base. Loosen the meat from the shell sides and lift it over the shell for an attractive presentation. Rub the lobster meat with olive oil, salt, pepper, and minced garlic.
  3. Step 3: Sear the Steak – Heat a cast-iron skillet or heavy pan over high heat and add a splash of olive oil. When the pan is smoking hot, place the steak in and sear without moving for 3-4 minutes until a deep brown crust forms. Flip and repeat on the other side. During the last minute, add butter, whole garlic cloves, and fresh herbs. Continuously baste the steak with melted butter for extra flavor and moisture.
  4. Step 4: Cook the Lobster – In the same pan or a separate one, add butter and minced garlic. Place lobster tails flesh-side down first for 2-3 minutes. Carefully turn lobster over and continue basting with butter until the meat becomes opaque and firm but tender, about 4-5 more minutes.
  5. Step 5: Rest and Serve – Remove steak from the pan and let rest for 5-7 minutes to redistribute juices. Plate steak alongside lobster tails, garnish with fresh herbs, and drizzle pan juices or garlic butter over both. Serve with lemon wedges to brighten flavors.
