Instructions

  1. Prepare the Dough: Cream the softened unsalted butter with granulated sugar and brown sugar until the mixture is light and fluffy. Beat in the egg and vanilla extract until fully combined.
  2. Combine Dry Ingredients: In a separate bowl, whisk together all-purpose flour, baking powder, and salt to ensure even distribution.
  3. Mix Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, stirring gently until a soft dough forms. Avoid overmixing to maintain a light, crumbly texture.
  4. Shape the Cookies: Divide the dough into two equal portions. Roll one portion between parchment paper into a rectangular shape. Dot the surface generously but evenly with small spoonfuls of strawberry jam, leaving space between dollops.
