This elegant and fun-to-make recipe requires no oven time and offers a refreshing fruity and creamy treat perfect for any occasion.

Ingredients

Scale

Filling

  • 8 oz cream cheese, softened
  • 1 cup whipped cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract

Fruit

  • 1 cup fresh strawberries, washed and thinly sliced lengthwise

Cake Base

  • 1 strawberry cake sheet or sponge cake sheet (approx. 9x13 inches)
  • Optional: 2 tbsp strawberry jam or preserve

Instructions

  1. Prepare the Cheesecake Filling: Beat softened cream cheese with powdered sugar and vanilla extract until smooth. Gently fold in whipped cream to create a light and creamy cheesecake filling.
  2. Slice Your Strawberries: Wash and thinly slice fresh strawberries lengthwise, keeping slices uniform for even rolling and a neat appearance.
  3. Prepare the Cake Base: Lay the strawberry cake or sponge cake sheet flat on a clean surface. If using strawberry jam, spread a thin, even layer on top to add extra moisture and sweetness.
  4. Spread the Filling: Using a spatula, evenly spread the cheesecake filling over the cake sheet, leaving about an inch of space at one edge to help seal the roll.
  5. Assemble the Rolls: Arrange the sliced strawberries lengthwise along the filling. Starting from the edge with filling, carefully roll the cake up, applying gentle pressure to keep the roll tight without squeezing out the filling.
  6. Chill and Slice: Wrap the rolled sushi tightly in plastic wrap and chill in the refrigerator for at least one hour to firm up. When ready, slice into sushi-sized pieces with a sharp serrated knife, wiping the knife clean between cuts for smooth edges.

Notes

  • Use room temperature cream cheese to avoid lumps in the filling.
  • A sharp serrated knife helps slice rolls cleanly without crushing them.
  • Chilling the rolls before slicing ensures they hold their shape well.
  • Choose ripe but firm strawberries to prevent sogginess inside the rolls.
  • Roll slowly and evenly to prevent cracks in the cake layer.
